Caesar Dressing
3 filets anchovies
1 tablespoon capers -- chopped
1 tablespoon Dijon mustard
1 egg yolk
1 teaspoon garlic -- chopped
3/4 cup vegetable oil
1 tablespoon red wine vinegar
1 tablespoon fresh lemon juice
1/4 cup heavy cream
kosher salt
Blend first 7 ingredients in blender until smooth. Add heavy cream and kosher salt to taste.
Yield: 1 quart |
